Black and White Aesthetic Pasta: A Sophisticated Holiday Dinner

  • 500g Black Squid Ink Spaghetti

  • 2 x 8oz packs Truffled or Plain Burrata

  • 18 Peeled Fresh Shrimp

  • 2-3 Garlic Cloves

  • Extra Virgin Olive Oil

  • Salt to taste

Instructions:

  1. Prep the Garlic and Shrimp: Cut each garlic clove in half and smash it. Add a generous amount of extra virgin olive oil to a pan. Fry the garlic until golden brown, then add the shrimp and sauté for a maximum of one minute. Season with a pinch of salt and remove the garlic.

  2. Cook the Pasta: Cook the spaghetti in salted boiling water for only 1-2 minutes, just enough to soften them. Once they bend easily, transfer the spaghetti to the pan with the shrimp. Add some pasta water, stir to combine, and cook until the desired texture is reached. Taste frequently.

  3. Finish the Dish: Once the pasta is cooked, add a drizzle of fresh olive oil or a small amount of butter.

  4. Plate: Arrange the pasta in a visually appealing manner on each plate. A white plate can enhance the contrast of the black pasta.

  5. Add the Burrata and Shrimp: Cut the burrata and spoon the creamy interior onto the pasta. Top with three shrimp and serve immediately.
